It’s my birthday, which i’m sure you know because I’ve posted it on every single platform known to mankind #sorrynotsorry and it would be RUDE if I didn’t make a classic sugar free, gluten free, vegan birthday cake and share the highly addictive 10/10 recipe with you.
So, here it is. In all its glory. I give to you…
MY BIRTHDAY CAKE.
It’s delicious and was built to be enjoyed by all. I don’t want any negative Nancy’s telling me how many calories is in this bad boy, I’m all about the cake and no calorie mathematician can change my mind. Besides, this tasty treat is full of nothing but goodness.
INGREDIENTS:
- 2 cups all purpose GF flour
- 1 cup coconut sugar
- 1.5 tsp baking soda
- 0.5 tsp salt
- 2 x banana
- 1 cup plant based milk
- 1/3 cup oil
- 1 TBS apple cider vinegar
- 2 tsp vanilla essence
METHOD:
- Easy as pie my darling. Put the oven on 180 degrees Celsius.
- Prep your two cake trays. Grease them up nice & good my sister from another mister.
- Place all your dry ingredients in a bowl and give them a good old mix until they’re all mashed in together like a very happy soon-to-be-cake-famiily.
- Place all your wet ingredients into your blender and blend away (yup, this includes your banana)
- And then…. place you're wet ingredients with your dry and mix and mix and mix and mix until you see the smoothest creamiest batter before your beautiful eyes.
- Share the batter between both baking trays, pop it into the oven and watch it grow and cook for 30 minutes
- After 30 minutes just poke it with a toothpick to triple check its cooked (the toothpick will be clean ifs it is) and then leave it to cool on a baking rack for another 20 minutes.
- And, VOILA. We’re ready to frost this puppy up.
- And the world shouts and screams and celebrates my birthday.
THE ICING:
So, about this. I am not a huge fan of refined sugar as you are well aware - which is what icing usually is. So, I tried a super easy little icing like thing for my cake which I thought was damn delicious!
- 1 can coconut cream (been in the fridge overnight)
- 1 teaspoon vanilla
- 1/4 cup maple syrup
Place all these yummy things in a bowls and whisk away baby. It’s worth it.
And decorate as you please. Probably the most important part. My mum decorated it if I’m perfectly honest, she couldn’t handle me decorating my own cake and I think she did an amazing job, and just like that yippididoodaaa my birthday cake was born. In all its GF, VGN, refined sugar free glory.
