Vegan vanilla cupcakes

Sometimes people hear the word “vegan” and assume the worst. STOP ASSUMING. Because these little bundles of sunshine are absolutely delicious in every sense of the word. They are hands down, the best vanilla cupcake I have ever eaten in my life.

Makes: 12 small cupcakes.

cupcake:

INGREDIENTS:

  • 1 x cup cake flour (or any other flour you like)
  • 1 1/4 tsp baking powder
  • 0.5 tsp salt
  • 3/4 cups sugar
  • 1/4 cup melted plant butter
  • 2 x flax eggs
  • 0.5 cup plant milk
  • 2 tsp vanilla
  • 2 tsp oil

METHOD:

  1. Place the oven on 180 degrees celsius.
  2. Grease your muffin tray.
  3. Mix the dry ingredients.
  4. Mix the wet ingredients.
  5. Now mix them together to form a batter.
  6. once fully mixed, place the mixture inside the muffin tray.
  7. Bake for 28 minutes.
  8. Leave to cool before icing them.

 

ICING:

INGREDIENTS:

  • 3.5 x cups icing sugar
  • 3 TBS melted plant butter
  • 4 TBS plant milk
  • 2 tsp vanilla

 

METHOD:

  1. Place all of the ingredients in a bowl, mix gently with spoon.
  2. Once everything is mixed together, beat the icing until it is light and fluffy.
  3. Thats it!
